I love a good hard boiled egg, especially when those hard boiled eggs lead to deviled eggs. Ya know what I mean? But I used to put off making them because the effort just didn't seem to outweigh the benefit. Babysitting the boiling water, making sure they didn't crack, etc etc. Who has the time or the energy?
Then I discovered OVEN hard boiled eggs--and man, this has changed my life for the better.
No babysitting the stove or the timer. Just pop 'em in & come back in a half hour.
YOU'LL NEED:
+ 12 eggs
+ muffin tin
+ bowl
+ ice water
HERE'S HOW:
Preheat the oven to 325.
Grab a muffin pan & your 12 eggs. Nestle one egg in each pocket. Then pop it in the oven & set the timer accordingly, see below--I personally prefer the 28-29 minute range.
20 minutes = v runny, soft boiled eggs
22 minutes = runny, soft boiled eggs
24 minutes = v gooey, medium boiled eggs
25 minutes = gooey, medium boiled eggs
26 minutes = "just set" medium boiled eggs
27 minutes = medium-hard boiled eggs
28 minutes = v creamy hard boiled eggs
29 minutes = creamy hard boiled eggs
30 minutes = firm hard boiled eggs
When the timer goes off, immediately plunge the eggs into a bowl with ice water to stop the cooking process. Once they've cooled, pull them & back into the carton or make deviled eggs immediately. Yum!
